4 slices of whole-wheat bread
2/3 cup whole milk or soy milk
1/4 teaspoon cinnamon and nutmeg
pinch of salt
2 tablespoons butter.
Whisk eggs, milk, and spices together and let each piece of bread soak for 2 minutes. Melt butter in frying pan and fry bread in pan until browned and egg is cooked.
I used Nature’s Promise brand whole wheat bread, Whole Foods brand organic eggs, Organic Valley brand unsalted butter, Whole Foods brand organic soymilk, Frontier Naturals brand nutmeg, and Archer Farms brand organic cinnamon. 365 Organic Soymilk is manufactured in the United States and uses organic soybeans. The Frontier Natural Products Co-Op brand has the most information about their company on their website than any other brand I have researched. They have a very large sustainability report. It details how they use “green” cleaning products in the factories, how they reduce their water usage, they purchase renewable energy credits which offsets their electrical power usage by one hundred percent! They use carbon neutral shipping and even have a very strict allergen control processes to prevent allergen cross-contamination. This company seems to care a great amount for the customers, employees, and environment. Organic Valley brand butter contains live cultures while all organic brands do not. It states on the Organic Valley website that my purchase of their organic cultured butter prevents 21 pounds of synthetic nitrogen and 4.5 ounces of synthetic herbicides and pesticides annually. This is great that their products do not contribute to the nitrogen pollution. These synthetic nitrogen fertilizers contaminate drinking water which can cause blue baby syndrome.
